Afkicken was 2 dagen ellende. Eerst van 2 pillen naar 1 pil per keer. Hondsberoerd geweest. Mijn vrouw wilde toen in kleine stapjes afbouwen. Ik ben van 1 naar geen gegaan. Nog een dag beroerd, maar daarna was het over mines ton. Nooit meer naar terug verlangd.

I’m very lucky to have found your website. I found lots of familiar traditional recipes from the past that I will be sending to my grandchidren to refresh their memories of the sessions we had together where I taught them my families version of these wonderful dishes. The version of minestrone that was my favorite was made with by my grandmother with turnips and kale… my mother always added spicy Italian sausage and substituted finoccio for celery.
Hi Amy, even it’s OK to freeze Minestrone leftovers, I don’t recommend freezing it if you want to serve it for the Holiday. Instead, you can do all the prep work of peeling and cutting the vegetable a few days in advance and cook the soup the day before. Remember also to boil pasta/rice separately as if set sit for too long it’ll loose its texture. Happy Holidays!
Als ik denk aan minestronesoep, denk ik aan een goedgevulde kom soep met uiteraard tomaat. Want zoals bij veel Italiaanse gerechten mag ook bij dit recept de tomaat niet ontbreken! Verder moeten er zeker Italiaanse kruiden in. En nog minimaal 3 andere soorten groenten. Anders wordt die soep natuurlijk nooit goed gevuld. Vaak wordt er ook nog pasta toegevoegd aan de soep. Zeker als je er een Italiaanse maaltijdsoep van wil maken, vind ik dat ook erg lekker. Dus die zitten er in dit minestrone recept ook in!
Awesome soup. Love the fact you can add almost any fresh vegetable. I cooked my veggies in Campbell’s no salt added broth and used spinach, zuchinni and green beans as savoy cabbage is not readily available here. The parmesan regannio rind gave it a great flavour. I cooked the pasta separately as you suggested. A lot of work, but well worth the effort. Thank you.
